Vegan Rice Crispy Treats made with peanut butter and chocolate are a decadent and fun twist on the classic. With 5 simple ingredients and less than 30 minutes this easy to make dessert could be yours!

Vegan Rice Crispy Treats made with peanut butter and chocolate for a flavor match made in heaven! They are not only easy to make but also kid and picky eater friendly as well.
I myself have always been a true Rice Crispy Treat fan. I remember making them as a kid from scratch. They are so much better than those boxed versions.
These peanut butter rice crispy treats are:
Sweet
Crunchy
Decadent
Chocolatey & Peanutbuttery
Now these don’t taste exactly like my childhood memories but the peanut butter chocolate twist is a fun and delicious way to enjoy this tasty classic. I can tell you they don’t last very long in my house!
Ingredient Notes:
- Crispy Rice Cereal – If you want to keep these vegan the traditional Rice Krispie brand is not. I used Nature’s Path and they work well.
- Peanut Butter – I generally use and unsalted unsweetened natural peanut butter. The only ingredient is peanuts.
- Maple Syrup – Pure maple syrup, not the breakfast kind. Agave may also work for these as well although I have not tried it myself.
- Vanilla – I prefer a good quality vanilla extract over imitation vanilla. It really adds a great flavor and is worth the splurge!
- Vegan Chocolate Chips – Any vegan chocolate will work I used the Enjoy Life mini chocolate chips.

How To Make:
Lightly grease or line a 8X8 pan with parchment paper.
In a large bowl add the peanut butter, maple syrup and vanilla and stir together until well incorporated.

Next add the rice crispy cereal and stir until evenly coated in your peanut butter mixture.

Now press your mixture into the pan really well. You will want to use either a spatula or your hands to do so.

Melt your chocolate chips in a microwave safe bowl in 30 second intervals, stirring in between intervals until melted.
Make sure it is completely smooth and there are no longer any chocolate chip chunks.

Pour the melted chocolate on top of your cereal mixture and spread with a knife or offset spatula evenly.

Place into the fridge to allow the chocolate to set. Once set remove from your pan and cut into 9 equal squares.

Tips For Success:
- Use natural Peanut Butter. It’s best to use a natural runny peanut butter for this recipe. The only ingredient should be peanuts and possibly salt if you want a salty sweet treat. Natural peanut butter will have the best consistency to coat the cereal. Just make sure to give it a really good stir before using.
- Lightly grease or line your pan. Make sure to lightly grease or line your pan to ensure you can easily remove your treats.
- Allow the treats to set before cutting. Let the chocolate set completely before cutting these into squares. This will make the treats easier to cut and allow them to set up. You will know the chocolate has set once it is no longer wet to the eye or touch. I generally like to place mine in the refrigerator or freezer to speed up the process.
Yes, any natural nut butter will work. Just make sure to use a natural runny kind. This will allow the cereal to be evenly coated and the bars to stay together.
Store in an airtight container at room temperature or in the refrigerator for up to 5 days. These do also freeze well and can be stored in the freezer in an airtight container for up to 3 months.

- I used Nature’s Path Crispy Rice Cereal to ensure these are vegan. Kellogg’s Rice Krispies use an animal derived vitamin and are not vegan.
- Make sure you press them well into the pan, this helps the treats to stay together.
