Simple Vegan Guacamole

This Simple Vegan Guacamole is ready in 10 minutes with only 7-ingredients. It's easy to make, ultra creamy and packed with flavor!

Ingredients
 

  • 3 large ripe avocados
  • ¼ cup red onion diced
  • ½ cup cherry tomatoes quartered
  • cup cilantro chopped
  • ½ lime juiced
  • 1 clove garlic minced (or ½ tsp. garlic powder)
  • salt to taste

Instructions
 

  • Chop up your onion, tomatoes and cilantro.
  • Slice avocados in half, take out seed and scoop avocado pulp out of shell, place in bowl.
  • Add lime juice, garlic, salt and mash until desired consistency. I like my guac smooth but still a little chunky.
  • Add onion, tomato and cilantro.
  • Stir gently to incorporate ingredients together.
  • Taste and season with additional garlic powder, salt and lime if needed.
  • Serve with fresh veggies and chips.

Notes

  • This guac is not spicy at all. If you would like to add spice I would recommend adding about 2 tbsp. fresh diced jalapeño.
